Something that sucks about living by yourself? Having no one to cook you dinner every night! So lately I have been eating the most…interesting…meals.
This was my first meal in the new apartment! Leftover Lime quesadilla. That had been in Sam’s fridge all day. And was stale. Mmmmm.
This was my dinner the second night! Campbell’s Minestrone. It was better than the previous night, but since I got the Healthy Choice kind, it didn’t really taste like much. I hate when low sodium = low flavor. Haven’t they heard of herbs? Or garlic? So I added another can of soup, without water, and it tasted wayyy better.
Note the wonderful “bowl” I am using. I went to Target to buy dishes but the ones I wanted/could afford were only in stock in black, and I wanted tan. That way when they chip – as they inevitably will, since its TARGET – it won’t be so noticeable. So until I buy dishes, its these wonderful plastic cups! 50 for $2.50! Yay!
It is now in the fridge, in its original pot. With the spoon in it. That’s what happens when you forget/don’t have money to buy Gladd containers, Seran wrap, etc.
Another thing I’ve been eating a lot of is peanut butter! This is because I bought peanut butter and jelly to make PB&J sandwiches. Then I left the bread I bought at Sam’s house for almost a week, so I had peanut butter, jelly, turkey, and cheese…and no bread to make sandwiches! So I ate meat and cheese roll-ups, and peanut butter with a fork. But just a little. Because I looove peanut butter but I would imagine it’s probably not the best thing to eat forkfuls of. Also, Publix brand peanut butter is deliiiicious. Sidenote: one of my coworkers eats soy nut butter instead of peanut butter, and its surprisingly good! Its sweeter than peanut butter and the nuts crunch like the middle of a Crunch bar, rather than a soft crunch like peanuts. Its really good!

YO Katy! quesadilla mmmm
