Last week, I came across this recipe on the Whole Foods website, and had to make it – since I am moving in two weeks, I have been cleaning out my pantry! Also, I’m a lazy chef and this looked pretty easy. And it was!
For the actual salad, all you need is spinach, red onion, and either Great Northern or cannellini beans. It sounds simple, but it’s really tasty!
Chop the spinach up finely and dump it in a bowl…
…and drain and thoroughly rinse the beans. Especially because you aren’t cooking these, you don’t want them to taste like that syrup that comes in the can.
Then slice the red onion finely. My onion was not sliced finely enough. I wound up picking a lot of the chunks out because they were too thick – make sure to slice them paper thin!
Mix the beans in with the spinach. It helps to have the spinach sliced pretty thinly so that they incorporate together nicely.
Add in the onion…see what I mean about the thick red onion?
For the dressing, all you need is dijon mustard, apple cider vinegar, and Italian seasoning!
Mix 2.5 tablespoons each of the mustard and the vinegar, and then add in a tablespoon of seasoning. Please ignore my cheap grocery store seasoning!
I let the dressing sit for about two and a half hours, just so that all the flavors could mingle. (I’m sorry, but whenever I say things like that, I’m reminded of watching Iron Chef with my dad, the Japanese one with the dubbed voices – they are always saying things like that and we like to make fun.) Anyway, I was getting my hair done – by my favorite ladies at Chez Badeaux! Love you Myrnelle! – so I mixed up the dressing before I ran over to the salon. When I got back, I just poured the dressing right on top of the salad, tossed it all together…
…and there you go!
How easy was that? And it tastes amazing….give it a try! Also, check out the Whole Foods website for more recipe ideas, they have some great-looking ones on there. I’ve got my eye on a bulgar wheat and tomato stew!

Dianne! You didn’t miss it :) I haven’t written a post yet because I’m not completely sure where I will be moving to! I have a few different offers/prospects that are located in different places, so I am holding off signing a new lease until I know for sure I will be living here.
